Jalapeño Popper Grilled Cheese

Ingredients (serves 1)

  • 2 slices sourdough bread
  • 2 tbsp cream cheese, softened
  • ¼ cup shredded cheddar cheese
  • 1 jalapeño, seeds removed and diced
  • 1 tbsp crispy bacon bits (optional)
  • 1 tbsp butter

Instructions

  1. Spread cream cheese on one slice of bread. Sprinkle diced jalapeño, cheddar, and bacon bits over. Top with second slice.
  2. Heat a skillet over medium. Butter the outside of the sandwich.
  3. Grill 2–3 minutes per side until bread is golden and cheese melts.
  4. Slice in half and serve hot.
