Ingredients

2 cups penne pasta

1 tablespoon olive oil

1 lb smoked sausage, sliced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Cajun seasoning

½ teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

1 cup diced tomatoes (canned or fresh)

1 ½ cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons chopped parsley (for garnish)

Instructions

Cook the pasta in salted water according to package instructions, then drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and cook for 3–4 minutes until browned. Remove from the pan and set aside.

In the same skillet, add diced onion and cook until softened. Stir in minced garlic, Cajun seasoning, smoked paprika, black pepper, and salt, cooking for another minute until fragrant.

Pour in diced tomatoes and chicken broth, stirring to combine. Let simmer for 3 minutes, then add the heavy cream.

Return the cooked sausage to the pan, then stir in the cooked pasta. Reduce the heat to low and mix in shredded cheddar cheese and Parmesan until melted and creamy.

Remove from heat and garnish with chopped parsley. Serve hot and enjoy.

Tips

Use Andouille sausage for authentic Cajun flavor. Adjust spice level by adding more Cajun seasoning or red pepper flakes. Substitute heavy cream with half-and-half for a lighter option.

Storage

Refrigerate for up to 3 days in an airtight container. Reheat on the stovetop with a splash of cream or broth.

This Spicy Cajun Sausage Pasta is a flavor-packed, one-pan dish that’s perfect for a quick and satisfying meal. Enjoy!
